(January photo challenge)

Eating the recommended 80 (!) grams of protein per day takes effort.  Especially for a vegetarian who is newly allergic to soy.

Often, I start with a handful of mushrooms, a handful of kale, and 2 organic, free range eggs scrambled in.  The toast is sprouted wheat and flax seed, spread with peanut butter.  Next to my plate stands 16 of my daily 80 ounces of water, along with my vitamins, minerals, and supplements.  All these gazillions of sick days give me time to take care of myself, so I do.

What do you have for breakfast?

    Cereal or oatmeal…needs improvement. 🙂

  3. 1/2 cup of old fashioned rolled oats, 4-5 diced prunes, a bit of wheat germ sprinkled in and then enough light (60 cal) soy milk to cook it all.

    My 2nd-born was allergic to soy for the first 4 years of his life. For his first 14 months, he was breast-fed, so I remember quite well how challenging it is to eat well without soy.
